Craving a Quick Snack? Try Kunal Kapur’s Instant Cheesy Masala Appe Recipe

Looking for a quick, filling and flavour-packed snack that can be prepared with everyday ingredients? Celebrity chef and MasterChef India judge Kunal Kapur recently shared an easy recipe for cheesy masala appe that could be a convenient option for breakfast, evening snacks or sudden hunger pangs.

Cheesy Masala Appe

Kunal Kapur shared the recipe on Instagram on September 7, describing the masala appes as a quick and nutritious option. The recipe combines semolina, curd and vegetables with a flavourful tempering of spices, while small cubes of cheese can be added to the centre for an indulgent twist.

The quantities mentioned in the recipe make approximately 36 small appes, making them suitable for serving to family or preparing a batch for snack time.

Ingredients for cheesy masala appe

  • For the batter, you will need

    1. 1 cup semolina (rava)
    2. ¾ cup curd
    3. 1 teaspoon salt
    4. Around 1 cup water
  • For the tempering.

    1. Use 2 tablespoons oil.
    2. 15 peppercorns.
    3. 2 dry red chillies.
    4. ½ teaspoon asafoetida.
    5. 1 teaspoon mustard seeds.
    6. 1 teaspoon cumin.
    7. 2 teaspoons chana dal.
    8. 1 teaspoon urad dal.

The recipe also includes 2 teaspoons chopped ginger, two chopped green chillies, a sprig of curry leaves, ½ cup grated carrot, ½ cup chopped onion and a handful of chopped coriander. Add 1 teaspoon baking powder before cooking. Cheese cubes are optional, and a little oil is needed for the appe pan.

How to prepare masala appe

Step 1: Prepare the batter

In a large bowl, combine semolina, curd, salt and water. Mix everything until you get a smooth batter. Allow it to rest for approximately 10 to 15 minutes. This gives the semolina time to absorb moisture and soften.

Step 2: Prepare the tempering

Heat two tablespoons of oil in a pan. Add peppercorns and dry red chillies and sauté briefly. Add hing, mustard seeds, cumin, chana dal and urad dal. Allow the spices and lentils to crackle and become lightly golden.

Step 3: Add vegetables

Add chopped ginger, green chilli and curry leaves to the pan. Sauté until fragrant. Then add grated carrot and chopped onion. Cook for two to three minutes until the vegetables soften slightly. Switch off the heat and add chopped coriander.

Step 4: Combine everything

Transfer the prepared tempering and vegetables into the rested semolina batter. Mix thoroughly. Just before cooking, add baking powder and gently combine.

Step 5: Cook the appes

Heat an appe pan and lightly spray or brush oil into each cavity. Pour batter into the cavities. If using cheese, place a small cube in the centre and cover it with a little more batter.

Cook the appes over medium heat, turning them occasionally so that they become evenly golden and crisp on all sides.

Serve the cheesy masala appes hot with green chutney or ketchup.

A quick snack for busy mornings

With semolina, curd and vegetables forming the base, these appes offer a simple way to prepare a homemade snack without requiring elaborate ingredients. The cheese filling can be skipped for a lighter version or included when you want an extra creamy centre.

As with any social-media recipe, individual results may vary depending on ingredient quantities, pan temperature and cooking technique.
